The Ciabattera AUTO ROLL is an advanced automatic line designed specifically for high-hydration bread production, such as ciabatta, with water content ranging from 70% to 90%. This machine is ideal for artisan-style bakeries aiming for efficiency without compromising on quality.
The process begins with a multiroller lamination system, which gently stretches and extends the dough by 40–60%, maintaining the dough’s airy structure and softness. From there, the dough passes through a longitudinal cutting system, followed by transversal guillotine cutting, shaping the dough into consistent pieces.
A key feature is the automatic panning system, capable of placing the cut dough directly onto flat or corrugated trays or boards, ready for proofing or baking — all without manual handling.
